Easy Cheesy Chicken Fajita Casserole
When it comes to fixing dinner, sometimes it can get very boring eating the same thing over and over again. This happens to my family all the time. So I went searching for something new, something delicious, and something my family would love. This recipe just so happens to be everything I was looking for. Also, if you have all the ingredients ready, it takes no time at all to pull together. It is super simple, full of easy short cuts, and very versatile. Plus, it is super delicious. Let’s make it together!!
All you need to make this recipe is:
2-3 Chicken Breasts or 1 1/2 lbs. of ground beef
16 oz. of Spanish Rice
2 Tbsp. Fajita Seasoning or more if you desire
1 15oz. can of Cream of Chicken
1 Green, Red, and Yellow Bell Pepper
2 Large Tortillas
2-3 Cups Shredded Cheddar Cheese
The first thing you need to do is imagine a picture of the chicken cooking, seeing as I’m an airhead and forgot to take a picture of it. But for real, you need to cook the chicken until it is completely done, and just set it aside to cool. -If you are using ground beef, just do the same, cook until done, drain fat, and set aside.
Next comes the peppers, you can either grill the peppers or sauté them. If you grill them, make sure to slice them afterwards. If you plan on sautéing them, slice them up before, and just throw a little butter or oil in there with them.
Here is where one of those short cuts I was talking about comes into play. I used Uncle Ben’s Spanish Rice that cooks in 90 seconds in the microwave, might I add this was the best thing since sliced bread. It was super fast and easy. But, feel free to use any type of Spanish rice you have, I just went for the quick version because I normally have 4 people banging their dinner forks on the table.
Also, let’s go back to the chicken (that is if you even used chicken). It needs to be shredded. Then coat the chicken or beef with the fajita seasoning. *This can be bought in any grocery store, in the spice isle.
Now just mix the chicken(or beef), the rice, and the can of cream of chicken, together in a bowl.
Once you get it all together, just spread the mixture into a casserole dish, like so. This begins our layering process.
Next lay the 2 tortillas on the rice mixture-they will overlap in the center. Then comes the peppers, just spread them over the tortillas. And, lastly comes the oh so wonderful cheddar cheese.
Once all the layers are, well I guess layered, just pop it into a 350 degree oven until the cheese is melted and glorious. Probably about 15-20 mins.
Then, all that is left to do is scoop it out and put it on a plate, and making sure you don’t choke because it’s so delicious you are eating it way too fast.
